Ok Cupcake, I am going to try what I can for your questions. Tanya being cold could just be an old lady thing. I know several women of all ages who seem to be cold all of the time (Later poster insert joke here about the land from which I originiate). So an older woman complaining about the temperature isn't weird to me. But maybe it means something who knows.
I really doubt the flat tire was intentional because it happened while they were fleeing for their lives from a Behemoth and nearly got them killed. Kalani was actually telling Angel to save himself when they got cornered, so the flat tire did nothing to help any secret goals. Plus it was revealed on We're Not Dead that Kevin Flood improvised the "Sorry about that flat tire" line. I apologise for my mistakes, don't you?
Pandora, of course Scratch was shocked to see the helicopter. The Mallers had been to LAX as established in this last chapter, so they know that there was just the one damaged chopper. This is a pristine helicopter that the Mallers had no clue the Tower had access to. Burt mentions they took routes to make sure the Mallers couldn't see them. It was an unadded element that threw a wrench in a plan that depended on the travel delay by car from the golf course to the Tower. Plus, zombie apocalypse, you are fighting against a few soldiers and a bunch of civilians, are you really going to expect them to have a helicopter?
