Chapter 31, Part 3 - CJ shows Saul her Katana, and reveals that at the start of the zombie apocalypse that it was the only weapon she had. She uses the katana on a zombie, but it gets stuck in its skull.
Chapter 32, Part 2 - CJ uses her Katana to cut a group of biters off at the legs, after which they bleed out.

Chapter 35, Part 1 - CJ engages in an epic Katana to knife fight with Scratch, and loses.

In "World War Z" a Japanese character named Kondo Tatsumi survives armed with only a Katana.
In "The Walking Dead" a female character named Michone is armed with a Katana.
